"This is a new wine from Lapostolle, bearing a nose that's intense and compact, with mineral and dark fruit aromas. It feels rich and muscular but not heavy, with berry, licorice, buttery oak and vanilla flavors. The finish is minty and chocolaty tasting. "Brilliant red purple color. Red fruit aromas such as cranberries and spices notes of black pepper. Elegant and balanced tannins very well integrated with chocolate and coffee notes in aftertaste. Very persistent finish." - Winery
Harvest:
"This 2012 vintage brought great conditions for growing our Canto de Apalta. No precipitation was recorded during this harvest season, and high temperatures during the summer and fall resulted in earlier than normal ripening and harvest. Rainfall was never a concern during this harvest. The winter 2011 was much drier than usual. October and november were just a little bit warmer and permitted a nice flowering of our grapevines. Summer started warmer than usual in December. However cool nights refreshed the ambient, raised air humidity, producing more color in the berries and preserve their natural acidity. The ripeness came earlier than usual, almost 2-3 weeks. So finally we harvested the red varieties 3 weeks earlier than usual to achieve the right level of ripeness." - Winery
Vinification:
"Our winemaking philosophy remains very natural with minimal intervention through the winemaking process of Canto de Apalta 2011. Our key points are 100% hand harvesting, strict fruit selection by 100% of optical state of the art grape selection, Vistalys. All fermentations were made with wild yeast. Canto de Apalta is a red blend that enhances the main characteristics of each grape into a symphony of the components; from Carmenere, its roundness and spicy expression; from Merlot, its red fruit and acidity; from Cabernet Sauvignon, its complexity and elegant structure; and from Syrah, its exuberant and attractive aromas. This vintage we blend 28% of Carmenere, 27% of Cabernet Sauvignon, 24% of Merlot and 21% of Syrah. 62% of the blend was aged for 11 months in a mix of new (5%) and used French oak barrels (85%). 38% of the blend was aged on stainless steel tanks to keep a fresh fruit component. There is no clarification and a very light filtration, in our quest of creating natural wines and not disturbs the natural balance." - Winery
