"Tasted privately with a negotiant. A beautiful sweet, slightly gamey nose with bright red berried fruits and hint of Medjool dates. Good definition. Very well balanced with superbly integrated new oak, good acidity and focus. Cassis, crushed violets and blueberry, with an almost Margaux-like finish. Very pretty and beautifully poised. "I have been a big fan of the 2006 Canon since its was unveiled as a finished wine in New York a few years ago at the Union des Grands Crus tasting. This most recent bottle was simply outstanding, as it soars from the glass in a beautiful aromatic mélange of black cherries, a touch of chocolate, cigar smoke, a complex base of soil tones, tobacco leaf and a judicious framing of new wood. On the palate the wine is deep, full-bodied and quite plush on the attack, with lovely nascent complexity, great focus, a fine core and great length and grip on the suavely tannic finish. I fully understand why the 2005 gets all the hype, but the 2006 Canon is a great vintage for this super property-make no mistake about it! 2020-2060."

"The velvety, silky style of Chateau Canon is the magical result of the way its grape varieties benefit from its soil. The limestone containing fossilized starfish makes the wines that grow in it fresh, subtle and elegant. They have a remarkable capacity for ageing. Chateau Canon is therefore a wine that requires patience, which over time slowly reveals its noble qualities." - Winery

Vineyard:
The different plots of vines total 22 hectares (54 acres) of very uniform soil types, which is the first hint that Chateau Canon is unusual with respect to the rest of the Saint-Emilion area. The subtle combination of limestone containing fossilized starfish covered by a thin layer of clay left behind by a prehistoric lake, constitutes an ideal environment for the grape varieties, highlighting the expression of their characteristics. Fresh, yet not very rich, this type of soil is a perfectly balanced medium for the vines that keeps yields down while enhancing quality. The 80% predominant share of merlot and the lesser proportion of Cabernet Franc is thus fully justified."

"The different steps in the vineyard management calendar are scrupulously respected throughout the year: double guyot pruning, removal of secondary buds, suckers remond, then green fruit "harvesting" and thining out on the growing vines. The final ripeness test announces the beginning of the harvest, which is strictly by hand only. Chateau Canon has chosen to manage its plots sustainably, ensuring the perfect ripeness and making it easier to identify the best batches of fruit, which are vinified separately.
