"Matured in oak barrels for 12 months, the Domaine du Pavillon has an intense aroma of red and black fruits, underline with a delicate note of spice and a final bouquet of liquorice. The ruby colour of the dark, deep wine comes from the ancestral winemarking process and the way the grapes are ripened in the shade of the vine leaves. The wine is generous in the mouth, round and with great depth. Harvested by hand this powerful vintage will be a perfect accompaniment to meat dishes, charcuterie and cheese and can be kept for up to 8 years." -Winery

WINERY:
"Domaine du Pavillon was born in the beautiful and comfortable farmhouse of Stéphane Cornu in the village of Mercurol in the Department of the Drome. When it was bought by his grandfather Vital in 1961, the farm had hundreds of fruits trees which have slowly been replaced by vines. In 1990, Stéphane Cornu took over the family farm and decided to bottle his own wine. This was the beginning of the red Crozes Hermitage wine from Domaine du Pavillon."

"Vital Cornu left his birthplace in the Ardèche to live on the other side of the Rhone river in the Drome. He gave each of his children a farm and on his farm in Mercurol wordked slowly to replace his peach and pear trees wich vineyards. And so winemarking came into the life of the Cornu family to quickly become a real passion that would be passed down from father to son - a new era had begun upon this estate with its rich historical past. There is actually a hunting lodge in the grounds that is mentionned in the land registry of Napoleon 1st (and which gives its name to one of the wines) as well as having the first cork lined cold store that was inaugurated by the President of the 3rd Republic, Emile Loubet."

"Born in 1966, Stéphane Cornu has always lived amongst winemarkers. As a young man he wanted to be an agricultural engineer but a bad fall forced him to make other plans for his life and from an early age he found himself working on the farm. However, Stéphane is not one to live with regrets. He watched the older generation working around him and, in 1990, when he took the farm over, he chose to get rid of all the fruit trees so that he could concentrate on his passion - the wines. Determined and adventurous. He saw things on bigger scale. he knew that this vines were hiding a fortune and decided to bottle the wine himself. His first vintage 89 won a gold medal at the Paris wine contest and, the following year his wine came first in its category with Gault and Millau. Domaine du Pavillon is mentionned in Robert Parker and regularly receives prizes. His limited supply (150 hectolitres) makes a wine that is much sought after." -Winery

VINIFICATION:
"Stéphane Cornu manages his 14 hectares of hillside vineyard himself. The 40 years old vines are the single-grape 100 % syrah. For ten years he produced his wine organically but ceased in 2008 following difficult weather conditions. However, he continues to cultivate his vines with the same knowledge and with respect for the land and surrounding countryside."

"Cultivated on the draining and stony soil, his vines are harvested by hand and the grapes, ripened ine the shade of the vine sleaves, are harvested when just ripe on the end of the summer before being put into cement tank to allow thermal cooling. Over a three week period, the wine ferment at constant temperature bringing out the exceptional quality of its natural aroma and magnifying the essential quality of grape itself. The wine then develops in oak barrels for 12 months before being exported world wide as one of the best vintages produced in the northern Rhone Valley." -Winery
