WINE:
"This wine brings together two of the great Shiraz regions of Australia. The Clare Valley component (75%) is all about power, structure and frangrantly perfumed fruit. The McLaren Vale portion (25%) is rich, licorice and chocolatey with a wonderfully sumptuous mouthfeel."
"These two components combine to produce a very complex wine displaying opulent aromas of mocha, plums, anise and spice. The palate is full bore. Deep, dark flavours of blackberries, plums, licorice and coffee are intertwined with some seriously good new and older French oak. " -Winery
VINFICATION:
"Small batch ferment in 2 and 4 tonne fermenters over a 12 day period using natural yeast. Hand plunged during primary fermentation. The wine was then left on skins for 15 days to enhance tannin complexity and maximize flavor and length. Pressed to tank then racked to wood after 4 days, using 25% new French oak and 75% in 1 to 4 year old oak for a total of 2 years."
"The color is an indicator to the power and concentration of this wine, deep black red. The bouquet is dark blackberry, with hints of spice and red licorice, the oak is all French which is subtle and gently enhances its layered characters. The palate is full sweet fruit of ripe mulberry and spicy blackberries. The fruit weight is powerful and long with grainy balanced tannin and acidity. "
