VINIFICATION & VITICULTURE:
"90% of the blend is aged for 20 months in French oak Burgundy barrels from five different coopers 225L and 300L. 10% is aged during 12 months in concrete tanks and 8 months in French oak Burgundy barrels. Mas Mallola comes from 18 ha of vineyards, all organically farmed. We adapt biodynamic methods to our particular environment."

Slow and natural fermentation using only indigenous yeasts. 10 days of fermentation at aprox. 28ºC and 30 days of maceration. Age of the vines: Between 11 and 40 years old. ESTATE: "The winery whose building was completed in 2005 is located on one of the four terroirs, some seven metres from the village of porrera, at the entrance of the land. I consists of 1.500 square metres arranged over three floors, two of which are more than seven metres underground. In this way, gravity is used for each of the stages of wine production, and the temperature and humidity levels required for the proper ageing and keeping of wines are achieved naturally."
