WINE:
"Vibrant, lustrous golden yellow. The palate is sweet but never cloying, and very long, offering nuances of honey, candied fruit and ripe fruit. An outstanding accompaniment for foie gras and marbled or fat, soft cheeses. Best within ten years of the vintage date." -Winery
VINIFICATION:
"The grapes are manually harvested in mid-October. The Picolit grapes are harvested manually in the closing days of October. They are placed on rush mats for a month in well-ventilated rooms until their sugar concentration has reached the desired level. At this stage, they are selected by hand several times and any mold or damaged berries are eliminated. After pressing, the must ferments slowly in wooden barrels. Fermentation stops spontaneously with the arrival of the first winter cold, leaving a relatively high level of residual sugar (more than 100 g/l). A subsequent period of lees contact and bottling 18 months after the harvest also contribute to Picolit's ageing prospects. Maturation for 15 months in Allier oak barriques and for eight months in glass." -Winery
VINEYARDS:
"Our long-established vineyards and range of clones imbue our Picolit with its unique sensory profile. The vineyards are located 150 metres above sea level and are south, southeast-facing. Marl and sandstone are predominant in the soil of Eocene origin. The yield is 4 hecolitres by hectare." -Winery
