Description:
"The grapes are harvested when fully ripe after a careful tasting in the vineyard. Divided according to the vineyard of origin, the grapes are vinified separately upon arrival in the cellar. After a short prefermentative maceration of 2-3 days at low temperatures, the grapes begin fermentation in temperature-controlled steel tanks for a period ranging from 10 to 25 days during which extraction is carefully regulated by punching down and pumping over, taking care of do not exceed 30 ° C. Once the maceration is complete, the must starts the refinement phase which occurs for 70% in French oak barrels of the 2nd and 3rd passage and for 30% in steel tanks for a period of 10-12 months.
