About the Winery
Michel Chapoutier is passionate about terroir and grape varieties. Alsace has always had a special place in his heart because of the particularity of certain varieties and their mineral subtlety. This vineyard came about by an association of friends and their consensus in exigent working techniques, even on very steep slopes. The vines take their nutritional value from a terroir of blue schist with a touch of sandstone, bringing originality to the wine. Across the Schieferkopf, Michel Chapoutier presents a translation of theses terroirs, reflecting the appellations.
Michel Chapoutier and his friends, listened, observed and scanned the area, finally selecting 5 hectares in the Bernardville area on the only terroir in Alsace made up of blue schist. It is one of the highest vineyards in the region at 380 m with south facing vines. It is said that it was here, in the 12th century, that the Cistercian monks planted vines.The monks made no mistakes when it came to choosing their terrain.
Vinification
After a long pneumatic pressing, cold static settling of the juice is carried out. The wine is then fermented with indigenous yeasts.
Winery Tasting Notes
Colour: pale gold with green highlights.
Nose: notes of candied lemon,ginger, passion fruit and gentian.
Palate: delicious, uplifting sweetness, nicely chiselled by the bitters, and characterized by a touch of citrus zest.
