"The strongest effort from Canon since 1982 and before 2009, the 2007 (75% Merlot and 25% Cabernet Franc) exhibits a dark ruby/purple color along with a beautiful bouquet of crushed rocks, boysenberries, blueberries, black raspberries, and licorice. The soft tannins, classic feel and texture, and medium to full-bodied, lengthy finish with no hard edges make for an enjoyable, potentially complex wine to drink over the next 15 years."

2007 Growing Season:
"2007 is characterized by a cool winter, February being a particularly rainy month (with double the average rainfall over the last 30 years). The flowering was a little early, thanks to an unusual warm April. The summer was rather fresh and overcast, the sunny days of September contributed greatly to a slow and homogenous maturity of the vines.

The hard work of our vineyard team, particularly attentive during the flowering and growing seasons, taking care of every plot, allowed us to obtain, contrary to all expectations, a crop of high quality with a very little sorting during the harvest." - Winery

Harvest:
"Since the 2002 vintage, the introduction of a new harvest reception system has enabled us to take even greater care of the selection and handling of the grape bunches. After a painstaking selection in the vines, the best bunches are taken in small-sized crates to the vat cellar entrance. These are then carefully tipped on to a sorting table, where a team of 6 to 8 people removes any berries that are of lesser quality. After a gentle de-stemming, the berries are then sorted by 10 people who discard any berries which have not reached perfect ripeness. The crop is then placed in small 3 hectoliter stainless steel containers and emptied into the new stainless steel fermentation vats by gravity. Canon thereby avoids any aggressive handling of the crop through pumps and pipes. " - Winery
