Description:

"Planted on an ideal, south-facing parcel, not far from Chevalier-Montrachet, the 40 year old vines grow on stony ground which contains a high percentage of limestone and is steeply sloped.

After harvesting by hand, carried-out when the grapes have reached full maturity, the grapes are gently pressed in a pneumatic press. The must is left to settle overnight and put into barrels, 50% in new oak barrels. The fermentation starts naturally using indigenous yeast and bacteria. After being racked 9 months later, the wines undergo a fine filtration using a membrane filter of 5μ and are then bottled by gravity.

Subtle when young, this wine needs time to show its character. A good firm structure with mineral aromas of flint." -Winery
