"Made in small batches, all cold soaked and hand plunged in open fermenters. 100% malolactic fermentation aged in French oak barriques (25% new) for ten months prior to blending. Bottled in March 2013 after minimal filtration. Available in screw cap only" -Winery
VITICULTURE:
"The grapes for The Sabre are from some of the oldest and best sited Pinot Noir vineyards in the high cool comate Lenswood and Piccadilly subregions of the Adelaide Hills. We work with our growers to produce moderate yields of fruit, well exposed to sunlight to maximise colour and ripe flavours." -Winery
THE VINTAGE:
"2012 was an excellent growing season with generally moderate temperatures, with a lighter than average crop showing. Cold windy weather at flowering reduced the crop further. Many Pinot Noir vineyards matured only 3.1 tonnes/hectare (1.25 tonnes/acre) or less. In addition large numbers of bunches showed âhens and chickensâ with many small seedless berries as well as full ones."
"This resulted in wines with a higher than usual skin to juice ration, producing wines of excellent colour and flavour concentration."
"Due to the light crops the grapes ripened early and all picking was completed between 15th and 23rd March." -Winery
