"I liked the new release of Pierre Paillard's non-vintage Brut even better than last year's bottle, as the slight coarseness to the mousse that I found last year was nowhere to be found in the current release. The wine is a blend of sixty percent pinot noir and forty percent chardonnay and offers up an excellent bouquet of apple, tart orange, warm bread, a fine base of soil tones, gentle leesiness and a touch of fresh nutmeg in the upper register. On the palate the wine is deep, full-bodied, crisp and impressively complex, with a fine core of fruit, lovely focus, elegant mousse and very fine length and grip on the well-balanced and classy finish. Fine juice that should add a layer of additional complexity with further bottle age. 2013-2025." (08/13)

"60% Pinot Noir and 40% Chardonnay. Based on 2009 with 25% reserve wine from 2008. Aged eight months on the lees before bottling and aged three and a half years in bottle before release. 7g/L dosage." - Importer

"Not to be confused with Bruno Paillard! Bruno is about five times the size of Pierre. Pierre Paillard is a small grower with eleven hectares of vines, all located in Grand Cru Bouzy. They are unique in the area because of their high percentage of Chardonnay in an area known for Pinot Noir (40% Chardonnay/60% Pinot Noir). The winery has been in the family for eight generations and they have been bottling under the Pierre Paillard name for four generations. They farm sustainably and use spontaneous yeast fermentations. They never stop malo on their wines; the freshness comes from the fruit. The wines benefit from extended aging on the lees, and the bottled wines are aged in the cellar for up to an additional 10 years for certain cuvees. The dosage is normally in the Brut range (6-8g/L) giving them a nice richness and subtle power on the palate. Their main cuvee is the Bouzy Grand Cru NV Brut. Tanzer has good things to say about it: A hefty, palate-coating Champagne that offers pliant orchard fruit flavors and a touch of orange marmalade. Finishes smooth and broad, with very good sappy persistence. 90pts. Total production for the estate is 8,000 cases." - Importer
