"I was very impressed by the fine quality of the new release of the Serveaux Fils "Rose de Saignee", which is one of the darker Roses that I tasted in preparation for this report, as the wine is a vibrant cherry red. This particular cuvee is a blend of fifty percent each of pinot noir and pinot meunier, with eighty percent of the blend from the 2008 vintage and twenty percent from2007. The bouquet is fairly deep-pitched, but classy and inviting in its melange of cherries, blood orange, sourdough, a touch of cinnamon, lovely minerality and a top note of rose petals. On the palate the wine is deep, full-bodied, complex and frothy, with a superb core of fruit and very good length and grip on the classy finish. This is definitely crafted as a food wine and is perfect at the table (it would be great with turkey come Thanksgiving time here in the states!). Lovely juice. 2012-2018." (08/12) |
Description:
"A genuine "bled" (partially macerated, free-run) rose made exclusively from black grapes grown in Passy (60% Meunier and 40% Pinot Noir), this Brut Rose is immediately tempting with its superb orangey-pink colour, scarlet highlights and bright white mousse. On the nose, its intense red fruit aromas and notes of rose and peony are literally spellbinding. Mouth-wateringly fruity on the palate, it has a soft, slightly peppermint finish." - Winery

"Equally attached to ancestral values, the Serveaux family makes Champagne according to the same precepts and practices of their forebears, the secrets of which have been haded down over the generations. Every stage in the vinification process is carried out on the estate, from pressing and the first fermentation through to bottle fermentation, riddling and disgorging. Nicolas and Pascal Serveaux have succeeded in astutely combining time-honoured techniques with modern technology. In the winery, they draw on skill and expertise in a characteristically thorough and painstaking manner, putting the accent on the typicity of their "terroir" and conferring their own special touch and talent. Proud to be Champagne "craftsmen", Serveaux Fils belongs to the French federation of independent winemakers (Federation des Vignerons Independants)"
"If every one of their Champagnes is unique, it's because Serveaux's Family have long-since discovered the secret of the relation between Man and Nature at that most critical of moments - blending. It is on this momentous occasion that they and their oenologist meet in the cellars to taste and skillfully blend wines from the year's harvest with their reserve wines from different grape varieties and cru classifications, each contributing their own experience, sensory perception and emotion. In Champagne country, this singular, and almost secret, operation is regarded as a fine art, a unique combination of know-how and love of wine and an affirmation of House style. Once blended, Serveau Fils Champagnes are then stored in the cellar for sereval years, slowly coming to maturity." - Winery
