"Only the choicest grapes, traditional to the wines of Valpolicella, are used to produce this wines through the classical Italian enological tradition- appasimento. The grapes are harvested at their peak and left to dry on reeds, leaving a dried, purer, more concentrated fruit prior to fermentation. Three years of aging in botti create a wine full of structure, flavour, and tannins. Only in the best years is there a small amount ultimately selected to mature for an additional 12 months to create a Riserva Amarone; the resulting wine is the most beautiful expression of the territory of Valpolicella." -Winery
