"Bright orange-pink. Aromas of redcurrant and cherry, with citrus and spice notes adding lift. Juicy and focused on entry, then chewy and firm in the middle, with very good depth to its spicy red fruit flavors. A yeasty quality comes up with air and adds depth to the long, sappy, linear finish. This Champagne would work well with light or rich foods, or by itself." (12/11)

The alcoholic fermentation lasts from 8-10 days and the wines go through malolactic fermentation to soften their acidity.
