"Grechetto is an ancient memory in Umbria. It is a very common variety in the centre of Italy and its origins are dated back to Greek roots. Anima Umbra Grechetto is the grape's propension to produce a wine inspired to tradition. Wine is protected from oxidation by the use of techniques like the soft pressing in saturated nitrogen atmosphere followed by a fermentation process at 18°C These techniques enhance aromas and freshness.

"Intense straw with green tinges. Intense and persistent apple and floral notes that give a quite complex aroma, really fine and delicate. Palate is dry with a marked elegance, very harmonic. A slight acidity makes it pleasant and fresh. Pair this with cold appetizers, soups with legumes, white meat and fish dishes." -Winery

"In 1971 Arnaldo Caprai bought the Val di Maggio estate in Montefalco, located in the region of Umbria. His lifelong dream was to produce a wine of his own and discover the potential of the local varieties –most of all Sagrantino. In 1988 his son, Marco Caprai, started managing the winery and with his passion and determination gave the necessary impetus to the production of top quality wines."
