WINE:
"It is a particular and delicately elegant white, with a yellow-straw color. The scent is intense, with characteristic aromas of pear and plum at the beginning, by floral notes of elderflower and hawthorne, completed with a sweet sensation of fruit. The mouthfeel is harmonic, with a long finish that extends and enhances its harmony. It must be served at 9-10 degrees Celsius and served with light hors d'oeuvres, soups, and plates made with light pasta and vegetables. It blends very well with the taste of fish, shellfish, and with meats such as turkey. Also, this matches well with new and well-matured cheeses." -Winery
VINIFICATION:
"The vineyards are located 150 meters above sea level and are on volcanic soils. The average age of the vines are 25 years old. The grapes are manually harvested at the end of September to the beginning of October. They are destemmed and the grapes are pressed, then put into a tank. Fermentation occurs at 17 degrees Celsius and malolactic fermentation occurs after. The wine is fined in a steel tank before bottling." -Winery
