"Saturated ruby. Cool, even restrained initially, but opens quickly to display a nuanced bouquet of red and dark berries, cola, tobacco, dried flowers and minerals. Builds in sweetness with aeration, the blueberry and cassis flavors reined in by juicy acidity and lifted by a tangy mineral tone. This is really quite complex and deep, with bright and dark fruit tones, abundant spice accents and an intriguing mineral component. "Ruby robe with violet tones. Very dense and tinted tears. Of attractive and intense aroma, with parade of Cervoles tipicity (flower of lavender, thyme, rosemary, leaves of evergreen oak). In background we discovered slight vanillas, notes of toasting, memories of cedar, and finally explosion of wild berries (jam of raspberry, bilberry), fresh cherry pillory. Sweet-toothed palate, simultaneously greasy and imposing. Immensely great mature tannin concentration, integrated during the passage by mouth. Sweet ending, with comfiture memories of mocha and certain mineral notes. Elegant and pleasant persistence in mouth of this great wine." -Winery

"The 700 and 750 meters of altitude of our parcels protect the aromas from the extreme heat, and favor cover all the produced thermal jump in those typical fresh nights of the mountainous garrigues of Cervoles. The vineyards are franc-argillaceous texture, presenting and displaying good hydric reserves in inferior layers of the subsoil." -Winery

VINIFICATION:
"Manual, through an exhaustive grapes selection. Previously it's been made the 'green harvested' and/or rinsing of the vines at different moments of the vegetative cycle. Fermentation occurs at over 28ºC. During this time, there is periodic and manual breakage of the cap. Maceration occurs during 30 days. Each variety was fermented and raised separately on its lees."

"Garnacha and Tempranillo in new Allier barrels of French oak (MT+) of the Radoux cooperage (Radoux Blend is a selection of French extra-fine grain oaks). Tronçais oak of the Taransaud cooperage for the Cabernet Sauvignon.
