"Grapes are harvested by hand and packed into small cases. At the winery, they are subjected to the first step in processing, or rather they are destemmed and pressed using the gentlest methods. The subsequent phase of wine-making takes place in temperature-controlled fermentation vats which, when skilfully managed, make it possible to guide the fermentation process based on the most modern oenological practices, At the end of alcoholic fermentation, malolactic re-fermentation is induced using only physical means and then the wine is allowed to rest inside oak barrels of various species and origins for the time required to age the product." -Winery
