Winemaking:
"The cuvee 'Les Beaux Jours' the production of young vines planted on the field since 2000. The grapes are hand harvested so as to optimize their health and preserve the pulp. Ninety percent of the grapes are then crushed and put into temperature controlled vats. The Sauvignon Blanc is aged on the lees to preserve the freshness of this variety, which is followed by a light filtration to stable and clear wine."
"Les Beaux Jours wines are made from carefully hand harvested grapes grown in silex and limestone soils close to the Loire river in the vicinity of Sancerre and Pouilly Fume. They are intended to evoke the simple pleasures of a warm and breezy summers day." - Importer

"The young and talented Emilie Balland started his own domaine in 1999. Hailing from a long line of Sancerre vignerons (dating back to 1650!), Emilie began to acquire his own parcels in the Coteaux du Giennois and Sancerre while finishing his studies in Agricultural Engeneering and Oenology. His total holding are a mere 5 hectares...[of which] 4 hectares are primarily in the heart of the Coteaux du Giennois appellation. The silex infused soils here create wines of incredible complexity and it is Emile's mission to showcase how beautifully the wines of this unsung appellation can sing!" - Importer
