"The 2004 Cavaliere is 100% Sangiovese, a variety that is much less common in Maremma than it is in the rest of Tuscany, largely because, in general, the warm conditions aren't as ideal for the grape. This is a big, rich, expansive wine that blossoms on the palate with sweet tobacco, earthiness, red cherries and underbrush. The warmth of Maremma is felt in the wine's sheer volume but the flavor profile is all Sangiovese. A long' sublime finish rounds out the Cavaliere in style. VINIFICATION:
"Produced from selected Sangiovese grapes which are harvested at full maturation, in the latter days of September. Destemmed and fermented in open wooden casks. Maceration of the skins for 20 days, with the cap manually pushed down 3-4 times per day. Following the pressing, the wine is transferred into 35 hectoliter oak casks for 12 months. The wine is then bottled, without being filtered and remains in bottle in the cellar for approximately one year. Known as one of the best Sangioveses of Tuscany, it's also the pride of Michele Satta."

"He has personally selected the best plants and today Satta is the only producer in Bolgheri who loves the challenge of this native and unique grape. The focus in the vineyard is to obtain the maximum expression from the vine, while working toward a natural, harmonious equilibrium within the vineyard." -Winery

"After graduating from agronomy school in Pisa, Michele Satta moved to Bolgheri in 1974 to work for a large fruit farmer. In 1982 Michele started his first winery with newly acquired vines from his previous employer. In this famous region of Tuscany, Michele rapidly earned respect and became known quickly as a vigneron, even working as a consultant for other properties, including Ornellaia in the early 90's at which time Michele planted many of their vineyards. Michele has always been the local expert on the great terroir of Bolgheri and this is why his wines have been so well regarded in Italy. Satta wines have been a well kept secret mostly because his international marketing dollars have been nil, unlike his oversized neighbors Ornellaia and Sassicaia. It is now time to bring this under-appreciated great winery of Italy to the US market."

"Michele is a father of six (an example of his traditional roots), a farmer and a winemaker. He is an uncomplicated, sincere and humble man with very clear priorities; family and vines. While he is a traditionalist, he is also a non-conformist. This deferential character, when combined with a deep dedication to perfection, balance in the vineyards and great attention to detail in the cellar, produces Bolgheri wines that communicate the amazing uniqueness of this man and his terroir.
