Description:

2007 Seven Hills Winery Cabernet Sauvignon Seven Hills Vineyard:

"Polished, focused and generous with its clearly articulated currant, plum and savory herb flavors, coursing smoothly through the refined finish. Drink now through 2017. 640 cases made." -92 points Wine Spectator

"A seductive nose, densely loaded with black currants and smoke, leads into a textural, single-vineyard, 100% Cabernet with great varietal presence and definition. It needs to breathe open, which puts on more flesh, and starts to unpack the layers. Streaks of mineral, iron, graphite and more cassis roll into the finish."-91 points Wine Enthusiast

WINE:
"Intense dark red. Elegant fragrance of dust, marzipan, red plum, black currant, spice, licorice and dried herb. Polished, complex palate of red & black fruits, bitter almond, herb, black licorice and sweet spice. Smooth, bright, lengthy finish."

"Aged exclusively in French oak, approximately 40% new, the profile is round with notes of clove and nutmeg. This is a Cabernet Sauvignon with great varietal character and a smooth lengthy finish. Historically these wines will show well for a decade or more, this vintage will age beautifully over the next 8-15 years. A collectable, limited bottling from one of the most highly regarded Northwest vineyards, that will not disappoint in the cellar." -Winery

VINEYARD:
"Located in the foothills of the Blue Mountains, in the southeastern corner of Washington, Walla Walla Valley is home to our winery, and our McClellan Estate Vineyard. With roots deep in the community, our longtime relationships with the region's winegrowers ensure us access to the best fruit - from the coveted 'Old Blocks' of Seven Hills Vineyard to such respected sites as Windrow, Minnick and Double River Ranch. Benefiting from a unique temperate microclimate, and deeper, silt-based soils, vineyards in this highly regarded appellation are at the heart of our Bordeaux-varietal program, which consistently produces food-friendly wines notable for their complex structure and graceful sophistication." -Winery

2006 Domus Aurea Cabernet Sauvignon Maipo Valley :

"Lilting, inviting aromas of mulled mint and warm espresso lead the way for a rich but supple palate of warm fig, currant preserve and bittersweet licorice. The long, suave finish lets a loamy edge play out. Old-school and lovely. Drink now through 2013. 2,760 cases made." -92 Points - Wine Spectator

"Domus Aurea’s 2006 Cabernet Sauvignon is a glass-coating opaque purple color. It exhibits an aromatic array of wood smoke, Asian spices, rose petal, cinnamon, and blackcurrant. Dense and layered on the palate, with chewy extract, it is structured for the long haul. Only a slight trace of bitterness in the finish keeps the score from being exceptional." 91 Points - Jay Miller - Wine Advocate

WINE:
"Domus Aurea is the cream of our wines¸ the result of skillful winemakers and the best possible natural conditions. Its texture¸ its flavor¸ round and pleasant tannins¸ will never be forgotten¸ such as the happy drinkers of this piece of art do think they know the secrets of the Maipo valley"

"Eucalyptus notes¸ balance and freshness of its cherries and chocolate zest are the promises of Domus Aurea. Nevertheless¸ the fact that the whole process is squared by the same respect for tradition and the “terroir”¸ makes every vintage a unique wine. This wine is unfiltered to preserve the original flavor and integrity¸ which will be much appreciated if you guard it for a long time."

"The wine is kept in french oaks for 18 months. The blend study begins after the first four transfers, always with the same respect for the identity that Domus orders. The wines are bottled after being blended, and then kept for 18 more months previous to their commercial launch." -Winemaker

VINEYARD:
"Clos Quebrada De Macúl is a single hillside family owned vineyard planted to cabernet sauvignon back in 1970 when it was unheard of in Chile to plant on more difficult-to-farm, lower-yielding hillside sites. The vines planted there are 80% Cabernet Sauvignon, and a 20% blend of Merlot, Petit Verdot, and Cabernet Franc."

"The grape harvest in Clos Quebrada de Macul usually begins in April and lasts one month. The grapes are not separated on a simple quality criteria, but either on their identity, proper to the Domus style." -Winery
