"On my recent trip to Chile, I attended a twelve vintage vertical of the Cabernet Sauvignon Antiguas Reserva going back to 1968. The 1968 was right at its peak as was the splendid 1978, the first vintage imported to the USA. There is no reason to think that the current and other recent vintages wonââ¬â¢t age as gracefully. WINEMAKING:
"Harvested when physiologically ripe, when the tannins are ripe and smooth, the process started with cold maceration to extract the aromas. For complexity, Chilean yeast and prise de mousse were used for fermentation, and the must was risen 3 to 4 times a day. Post-fermentation skin maceration was added for more dimensions. Once pressed, the wine was transferred to small French oak barrels with different cooperages. Finally, the wine was clarified with egg white and a light filtration was applied before bottling." -Winemaker
