Description:

2007 DOMAINE TOUR SAINT MICHEL CHATEAUNEUF DU PAPE TOUR DU LION:
"The outstanding 2007 Chateauneuf du Pape La Tour du Lion (75% Grenache, 20% Syrah, and 5% Mourvedre and Cinsault from 50+-year-old vines) reveals some oak, but that component is nicely masked by the wine’s deep black currant, black cherry, licorice, smoke, and roasted herb characteristics. This beautifully dense, pure, exuberant 2007 displays an impressive integration of acidity, tannin, and alcohol. It should drink nicely for 12-15 years." "Another young woman, Marielle Fabre, is in charge of Tour Saint-Michel, a 90-acre estate that has recently burst on the scene after winning some big prizes at the annual festival hosted by the vignerons called the Festival of Saint-Marc. These modern-styled Chateauneuf du Pape are aged in foudres as well as small barrels, the latter being used for the Feminessance and La Tour du Lion." -92 points Robert Parker

"Saturated ruby. Exotic, expansive bouquet of black raspberry and cherry liqueur, potpourri and spicecake. Lush and creamy in texture, offering sweet red fruit flavors that gain power with air and take a turn to boysenberry on the back. Seamless, alluring and on the jammy side, finishing with very good punch and lingering sweetness. This could be drunk without guilt now. While the 2007 Feminessance is packed with sweet raspberry fruit, it's also extremely ripe, with too much roasted character for me. Fans of superripe Chateauneuf might go for it, though." -90 Points - Josh Raynolds - International Wine Cellar

WINERY:
"The Domaine Tour Saint Michel has been a family estate for 3 generations. At first, Michel FABRE, the founder of the estate in 1930, passed on his passion to his son, Henri. Together with his wife Eliane, he developed and extended the estate. Today, the vines cover 40 hectares, including 35 hectares in the appellation Chateauneuf-du-Pape. Mireille, their daughter, is now in charge of the estate, inspired by the family tradition but also bringing a more modern approach. The estate is located in Chateauneuf-du-Pape,in the south of the appellation (Grand Coulet, Les Serres)." -Winery

"Tour Saint-Michel has 35ha of red and 1.3ha of white grapes varieties within the appellation. The vineyards are located in the south (Les Galimardes and Les Serres) in immediate vicinity of the estate. The soil consists mainly clay with gravel subsoil, and is covered with large stones. The red vines are an average of 40 years old and about 80% is planted with Grenache. Cuvee la Tour de Lion, made since 2003, consists of 75% Grenache, 20% Syrah, and 5% mix of Mourvedre and Cinsault." -Harry Karis, the Chateauneuf du Pape Book

2006 CHATEAU CANTEMERLE:
"As I indicated last year, quality has improved dramatically at this estate, and the 2006 is a quintessentially elegant Bordeaux displaying a dark ruby/purple color, a lovely bouquet of forest floor, sweet cherries, cranberries, and black currants, medium body, a textured, sweet, tannic mouthfeel, and a long finish. Everything is beautifully pure as well as perfectly balanced in this outstanding effort. Anticipated maturity: 2010-2025. Excellent value." -90 Points Robert Parker

WINE: Elegant as a well-tailored evening dress, this wine is highlighted by its enticing, attractive color. The nose is still quite reserved, but swirling the glass brings out the wine's spice, vanilla and wood aromas. On the palate, soft tannins find graceful expression; their silky, smooth elegance is characteristic of Cantemerle's great wines. This refined texture combines with aromas of leather, tobacco and black fruit, which have a persistent presence in the mouth and a long finish. Cantemerle 2006 is still very young but possesses a great attractiveness, with its delicate femininity and engaging roundness already offering much pleasure. Although it will become a fine bottle with time, the wine is already enjoyable today. Decanting is a must. This wine is 58% Cabernet Sauvignon, 33% Merlot, 6% Petit Verdot, and 3% Cabernet Franc. -Winery

VINIFICATION:
"The grappes are hand-sorted. In the past, the destemming and the crushing were done at the same time and a non-negligible quantity of undesirable vegetal matter (pieces of stem, green berries, leaves) was mixed with the wine grapes. Adding a sorting table between a top-of-the-line destemmer and the crusher has enabled removal by hand of all elements that can give a vegetal character to the free run wine. This is a decisive stage towards expressing the purity of free run wines."

"Fermentation occurs over a period of 28 to 30 days. Selective devatting by layer. Selective devatting by layer is a Château Cantemerle innovation. After the running off, the top of the cap (dry and oxidated skins) and the bottom (pips, sediments mixed with the marc) are removed. Only the heart of the cap, that contains the best phenolic compounds, is pressed."

"16 months - 12 months in French oak casks (50% new oak) 4 months in vat after blending. The wine ages lot by lot for 12 months in French oak barrels (medium toast). Then the final blend rests in vats for another 4 months. An ultra-light fining is done during that period of time but no filtration occurs prior to bottling." -Winery
