"The Fallers’ 2005 Pinot Gris Cuvee Saint Catherine is smoky, spicy and obviously ottling-inflected from the tip of its nose to its long, pungent, chewy, faintly warm finish. Yet, there is admirable richness as well as purity of peach and persimmon fruit here – even the bit of heat is like that of skillfully-employed chili peppers: invigorating and transparent to the wine’s other flavors. It seems quite possible that 3-5 years in bottle will bring further complexity but it can be employed at table right away, its 14 grams of residual sugar by no means engendering significant sweetness." - 90 Points - David Schildknecht - Wine Advocate

"They are full bodied, with complex bouquets and a beautiful roundness. They are delicious with veal, escalope à la crème, risotto, lamb, chicken and all sorts of poultry. Very rich for the late vintages, Tokay Pinot Gris goes really well with foie gras."

"Origins: the old vines of the Clos de Capucins. The Tokay Sainte Catherine has a nice power and a slight roundness, well balanced by a nice acidity. It is wonderful combined with white meats en sauce, risottos, poultry such as geese, ducks, etc" - Winemaker

"The historical clos extends over 5 hectares (12 acres), protected by the walls of the Capucins' old convent. It is mentioned as soon as 890, when Richarde the empress gave it to the Etival Abbey which later on gave a part of it to the Capucins monks."
