"By using new fermenters which better dissipate heat, the 2014 Cabernet Sauvignon lots that were selected for the Arctos blend have concentration, intensity and great color but without the drying tannic grip that a hot ferment can extract from the Cab skins and seeds.
The fruit character here is black- black plum, black currant, black olive tapanade, all very classic Columbia Valley Cabernet Sauvignon descriptors. We "cherry picked" my favorite new oak barrels of Cab, largely Taransaud and Sylvain reserve, for this blend to add a beautiful melted dark chocolate character to the nose and tension and finesse to the mouth. We have blended in Petit Verdot and a tiny bit of Merlot to lengthen and lift the finish.
With this classic style Cabernet based wine, I'm looking for both power and harmony - a seamless and delicious Arctos." - Winery
